Week 1 Complete! Happy Valentine's Day

So hopefully y'all made it through week 1 without too much detox pain.  By now you should be starting to feel good - sleeping better, wodding better, less cravings.  I myself am in shock that I went a whole week without dairy.  And surprisingly haven't been jonesing for cheese.  I have been enjoying having my sugar-free bacon a few times per week at breakfast, and so has our 6 am mascot, Rhett Butler.  No surprise he prefers bacon for breakfast to oatmeal.  :)

Keep pushing through this week.  Focus on the small successes and keep in mind that this is a LIFESTYLE adoption not a diet.  So make sure you're working on challenging levels that you can maintain.  We've already had one person report a 9# weight loss.  Yes you read that - 9 pounds in 1 week.  Take that Biggest Loser!  What Ranch?

Scrumdiddlydumptious Devil Eggs



Ingredients 
(for 8 devils):
- 4 hard boiled eggs
- 1 avocado
- 2 teaspoons hot sauce
- 1 tsp lemon juice
- salt & pepper to taste
- 8 thin slices smoked beef

Peel and half the eggs and spoon their yolks into a bowl. Mash the yolks with the avocado, hot sauce, lemon juice, salt and pepper to taste. Refill egg whites with the yolk mixture. Drape smoked beef slices on top, and serve!

I personally, prefer to top this with bacon (shocker).

Now wait!  It's Valentine's Day....my favorite holiday as the 6 am class can confirm!  So bonus recipe!!!!

Zucchini Pancakes!!!



Ingredients:
• 1 zucchini of medium size
• 1 large egg
• 1 green onion of medium size
• Salt and pepper to taste
• 2 ½ tables of olive oil

Preparation:
• Chop the green onion.• Grate the zucchini into a bowl.
• Now mix the grated zucchini and chopped onion in a bowl.
• Add 1 large egg to the mixture and mix thoroughly by adding salt and pepper.
• Put 3 mounds of zucchini mixture into the pan and fry it by pressing down to flatten until lightly browned, then turn it and let the other side to be browned.
